The other 10% is made of stainless steel; unlike old-fashioned copper pans which are lined with tin, stainless steel does not need to be re-tinned every few years and will last forever. Two bronze handles add old-world charm, and make it lovely for oven-to-table dining. This shape is wonderfully versatile: flat enough to sear meat, tall enough to make a stew or curry.
